For three weeks, we place meat cuts to a special chamber with a continuous blow off system, where the temperature is maintained at +1 °C. For the antibacterial effect, Himalayan salt is used inside the chamber, where a microclimate with certain humidity is maintained, so that meat starts losing moisture and, together with it, up to 30 % of its weight. As a result, taste is naturally enhanced, which makes such meat worth of being served to genuine gourmands.
